Although, cilantro-lime rice is not traditionally a Colombian way of serving rice, cilantro and lime are key ingredients in Colombian cuisine! With that being said, this cilantro-lime recipe pairs well with all of my favorite Colombian dishes.
The rice is zesty, fresh, light, and earthy. I love to pair it with beans and veggies!
What You’ll Need:
- 2 cups of water
- 1 cup jasmine white rice
- 1/4 cup lime juice
- 1/4 cup chopped fresh cilantro
- 1 tablespoon of olive oil
- 1 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Directions:
- Rinse the rice until the water runs clear.
- Then, place the rice into a non-stick medium size pot.
- Add the water, olive oil, salt, garlic, and onion powder. Stir to combine.
- Bring to a boil (this took me about 15 mins on medium heat).
- Once the water is all evaporated, you will see that bubbles will start to form on the rice surface. Once this happens, give the rice a quick stir to ensure all the water has evaporated, but that it is not sticking.
- Cover with a lid and lower to the lowest heat setting on your stove. Cook in the lowest setting for another 15 for minutes, being sure to not open the lid.
- At the end of the 15 minutes, open the lid. Add the cilantro, lime juice, and mix well. Season to taste.
- Yields about 5-8 servings.
- Enjoy with black beans, red beans, or with huevos pericos!
