This cilantro-mayo recipe is so easy to make and pairs well with many Colombian-American recipes! While cilantro-based mayo is not unique to Colombia, it compliments Colombian cuisine so nicely!
The best part is that this sauce just needs a few ingredients that are probably already in your kitchen!
Use your freshest cilantro and seal in an airtight container up to 3 days (in the fridge of course!)
What You’ll Need:
- 1 cup of packed cilantro
- ¼ cup of mayo
- 2 tablespoons of lime juice
- ½ teaspoon of salt
- ½ teaspoon of pepper
- ½ teaspoon of minced garlic
- ½ teaspoon of onion powder
Directions:
- Combine all of the ingredients in a food processor. Scrape down the sides as needed.
- Pulse until creamy and liquidy.
- Enjoy with arepas, beans and rice, or any snack!
- Yields ¼ cup of sauce.
