Ensalada Rusa (pronounced en-sah-la-dah roo-sah) is a Colombian style potato salad that includes carrots and peas as the key ingredients.
Growing up, this is how my parents always made potato salads in our home and its one of my favorite home recipes.
This recipe makes a CREAMY, TANGY, and VEGGIE packed potato salad, but most importantly, its so easy to make! Give it a try and let me know what you think!
Tips: I like my potato salad tangy, if you prefer it less tangy, simple reduce the amount of lemon juice. I also like the potato soft and mashable. If you prefer a firmer potato, simply boil it for less time!
What You’ll Need:
- 2 cups of diced red potato
- 2 cups of diced russet potato
- 1 ¼ cups of diced carrots
- 1 cup of peas
- ½ cup of finely chopped parsley
- ½ cup of finely chopped red onion
- 3 tablespoon freshly squeezed lemon juice
- 2 tablespoons of sour cream
- 2 tablespoons of vegan butter
- 2 tablespoons of mayo
- 1 ½ teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of hot sauce
- ½ teaspoon of garlic powder
- ½ teaspoon onion powder
Directions:
- Bring a pot of water to boil. Season with salt, then add your diced potatoes.
- Boil the potatoes until they are fork tender or for about 30 minutes.
- When you have 8 minutes remaining on the potatoes, add your diced carrots.
- When you have 3 minutes remaining, add your peas.
- Once all of the veggies are ready, drain and place in a large bowl.
- While the veggies are still hot, add the parsley, red onion, lemon juice, sour cream, butter, mayo, salt, pepper, hot sauce, garlic powder, and onion powder.
- Use a fork to gently combine the potato salad and incorporate all the ingredients.
- Top with more parsley.
- Can be enjoyed cold or warm and as a side.
- Yields 5-8 servings.
