This Guava Stuffed French Toast is inspired by my love for bocadillo. Bocadillo (pronounced bo-ca-dee-yo) is a Colombian snack that combines cubes of guava paste with equal size cubes of salty cheese. The guava and cheese make for the perfect sweet and savory combination. Modeling after bocadillo, this french toast is stuffed with guava sauce and cream cheese for a Colombian-inspired twist!
Try this guava stuffed french toast for a weekend brunch! I hope you enjoy this fluffy, creamy, tangy, and sweet creation as much as I do!
Tips: Make the guava sauce ahead of time to cut down your cooking time!
What You’ll Need:
- 4 slices of brioche bread
- 2 eggs
- 1/2 cup of almond milk
- 1/4 cup of cream cheese (room temp)
- 1/4 cup of powdered sugar
- 1 1/3 tablespoon of guava sauce + 1/4 cup more for drizzling
- 1 tablespoon condensed milk + 2 tablespoons for drizzling
- 1 tablespoon lime juice
- 2 teaspoon sugar
- 1 1/2 teaspoons of lime zest
Directions:
- In a large bowl, add the eggs, almond milk, lime juice, 1 teaspoon of sugar, and condensed milk. Whisk to combine. This is your batter.
- In a separate small bowl, add the cream cheese, 1 teaspoon of sugar, and guava sauce. Use a spatula to mix well. This is your guava cream cheese.
- Lightly toast your bread (If you don’t have a toaster, you can heat a large non-stick pan over medium heat, add your 4 slices of brioche and heat for about 4 minutes or until the bread starts to feel a little firmer to touch).
- Next, take your guava cream cheese and apply an even layer onto one side of each brioche slice.
- You should have 4 slices of brioche with guava cream cheese. Press two slices of bread together so that the guava cream cheese sides touch each other. Repeat with the remaining two slices. This is the guava filling of your french toast.
- Heat a large nonstick pan on medium heat.
- Once the pan is hot, take your french toast and quickly dip each side onto the batter to coat evenly. The bread should not be submerged for more than 3 seconds on each side or the batter will make the bread too soggy.
- Once the bread is submerged in the batter, place it on the hot pan. Cook each side for 7 minutes or until the french toast hits the perfect color and texture.
- Top with guava sauce, condensed milk, powdered sugar, and lime zest and enjoy!
- Yields 2 servings.
